Hi, I’m Elle, the creator of Eaten By Elle! I’m a MSc Nutrition graduate with a goal to live a healthy, sustainable lifestyle. As a part time photograper and full time foodie, I created this space for me to share my nutritional knowledge, tips on living sustainably, and delicious creations.
About Me
I have always had a love a food, and decided to make it my career during my Undergrad where I studied Culinary Science. After completing this degree I was ready for an adventure, so flew accross the ocean to start my Post Graduate Degree in Clinical Nutrition in London.
After graduating, I got my first job with a healthy food and drinks brand in London which allowed me to live there for another two years. During this time I realized how much I love working in the startup field and the opportunity to bring healthy and sustainable choices to consumers.
Living in London taught me so much about independence, different culures, sustainability and more. Since moving back to the United States, I’ve tried to implement what I’ve learned and live a more concious life.
I love to travel! While I was living abroad I tried to make sure I saw as much of Europe as possible, and continue to travel as often as possible today.
I’m a total dog person and adopted my own furry friend, Benny, in 2022.

I believe a diet that is heavily plant based, and properly balanced is key for living your best life. On this blog you’ll find recipes that reflect that belief. I don’t forbid dessert, I don’t believe in banishing carbs or meat from your diet, I believe that eating can be both fun and nourishing if you have the knowledge and tools. Within each recipe I try to identify a key nutrient that your body will receive and tell you a bit more about the benefits. You’ll also find science based nutrition posts highlighting various aspects of how food affects your body. With a little education on the amazing things food can do, you’ll be able to start making better choices in your every day life.
Another component to this blog is sustainability. I’m on a mission to share products, ideas and hacks to reduce the use of single use plastics and create a more sustainable lifestyle.
