Cinnamon and Cardamom Muesli

I love carbs.  Especially the carbs you tend to eat at breakfast.  Oats, cereal, french toast…could eat them all day!  Of course I know that a healthy diet requires more than carbs, and I equally love my veggies, proteins and fats, but there is just something about a bowl of oats and nuts with some fresh cold plant milk!  But one thing I’m not so fond of is the high sugar content of many cereals and mueslis that you see on the shelf.  Thus, I decided to make my own!

I plan to create several muesli recipes, but for my first one I decided to use two of my favorite spices – cinnamon and cardamom. The combination of the two creates a warm, sweet flavor that is so comforting in the morning. If you’ve never used cardamom before, now is the time to start!  It’s so delicious and adds a subtle sweet note without the sugar. 

Remember that muesli is much more dense than your usual bowl of cheerios.  A serving size is 1/2 C and gives you about 180 calories.  Of course this muesli is also more nutrient dense than cheerios providing good sources of fiber, protein, calcium and iron.

Ingredients

3 C oats
1/4 C barley flakes
1/4 C toasted wheat flakes
1/4 C rye flakes
1/4 C puffed quinoa
1/4 C milled chia
1/2 C sultanas/raisins
1/2 C walnuts
2 T cinnamon
2 T cardamom

Directions

Mix all ingredients together and store in an airtight container.

Serve hot or cold with your favorite milk!  Enjoy 🙂
