  • 1 White Onion Chopped
  • 1 Leek Sliced
  • 3-4 Carrots Peeled and Chopped
  • 2 C Chopped Green Beans
  • 2 C Chopped Baby Potatoes
  • 1 14 oz Can of Corn not drained
  • 1 14 oz Can of Chopped Tomatoes
  • 1 14 oz Can Kidney Beans
  • 1 14 oz Can Butter Beans
  • 3 C Vegetable Stock
  • 4-5 Large Leaves of Chard Sliced
  • 3-4 Cloves of Garlic Minced
  • 2 Tsp Red Pepper Flakes
  • 1 Tsp Garlic Salt
  • 1 Tbsp Penzey’s Parisien Bonnes Herbes*
  • Salt and Pepper to Taste

Instructions
 

Directions

  • Prep all the veg as specified above
  • Place All Ingredients except chard into the slow cooker and give it a stir
  • Cook on Low for 7-8 hours or High for 5-6 hours, until veg is soft
  • In the last hour of cooking add in the chard
  • Taste and adjust seasonings as needed

Notes

*This is a spice blend of chives, dill weed, French basil, French tarragon, chervil and white pepper. If you cannot find this brand another will work, or mix the herbs yourself.
