Vegan Spiced Chickpea Pita Pockets

Chickpeas
- 1 can Chickpeas
- 1/2 tsp Turmeric
- 1/2 tsp Cinnamon
- 1/2 tsp Ground Coriander
- 1/2 tsp Ground Ginger
- 1/2 tsp Onion Powder
- 1/2 tsp Cayenne
- pinch Salt and Pepper
- 2 tsp Olive Oil
Sauce
- 1 cup Plain Vegan Yogurt
- 3-4 tbsp Fresh Dill
- 1 Green Onion
- 2 cloves Garlic
- 1 Juice from Lemon
- pinch Salt and Pepper
Assembly
- 2 Whole Wheat Pita Rounds
- 1 large handful Arugula
- 1 handful Sprouts
- 1 Sliced Cucumber
Preheat oven to 350F/180C
Mix chickpeas with spices and olive oil and place on baking tray
Roast for 20 minutes, stirring halfway through
Blend sauce ingredients in a food processor or blender until large chunks are gone
Cut pita rounds in half, creating 4 pockets
Fill Pockets with Arugula, Sprouts, Cucumber, Chickpeas, and Sauce
