There’s nothing like a warm comforting bowl of soup when it’s cold and miserable outside. Sometimes I can almost forget we’re in the middle of winter and I haven’t seen the sun in months when I’m cozied up under blankets with a hot water bottle and a bowl of soup. Almost, but not quite.
This soup is not only delicious and full of good for you ingredients, but also incredibly easy to put together. Just prep the veg and throw everything into the pot! You can easily substitute or add additional veg to the recipe, just be sure to wait to add leafy greens until about an hour before it’s done. I seasoned this soup to give it a bit of a kick, but the base pairs easily with many different flavors so feel free to give it your own spin!
Swiss Chard is a leafy green vegetable known for being able to thrive in poor growing conditions and it’s impressive nutritional profile. Slow Cooker Vegetable Bean Soup

- 1 White Onion Chopped
- 1 Leek Sliced
- 3-4 Carrots Peeled and Chopped
- 2 C Chopped Green Beans
- 2 C Chopped Baby Potatoes
- 1 14 oz Can of Corn not drained
- 1 14 oz Can of Chopped Tomatoes
- 1 14 oz Can Kidney Beans
- 1 14 oz Can Butter Beans
- 3 C Vegetable Stock
- 4-5 Large Leaves of Chard Sliced
- 3-4 Cloves of Garlic Minced
- 2 Tsp Red Pepper Flakes
- 1 Tsp Garlic Salt
- 1 Tbsp Penzey’s Parisien Bonnes Herbes*
- Salt and Pepper to Taste

- Prep all the veg as specified above
- Place All Ingredients except chard into the slow cooker and give it a stir
- Cook on Low for 7-8 hours or High for 5-6 hours, until veg is soft
- In the last hour of cooking add in the chard
- Taste and adjust seasonings as needed
